Chef Kalman on KCAL9 News

Chef Bruce Kalman stopped by the KCAL9 News studio to cook up some Wild King Salmon and talk about his upcoming appearance at The LA Times, “The Taste.” See the full clip below.

I know the guy who caught that and when I get it, it’s a day out of the water.

We use the whole fish, the belly and the collar.

I don’t like buying fish that are just as filets or without the head, those are the telltale signs, in the head and the gills, of how fresh that fish really is.
